Roasted Blueberry Cupcakes

This weekend I spent at home with my parents as it was my birthday on Thursday and Father’s Day on Sunday. I don’t get to spend much time with them as I’m working full time now, plus all of my sports and activities in the evenings and weekends so I really relished going home. Usually I make my Dad a Mary Berry cherry cake but he requested a blueberry cake next time I baked for him. Well I made blueberry cupcakes so sort of what he asked for!

I wanted to make blueberry flavoured cupcakes rather than vanilla ones with blueberries in them so in my various browsing of baking and foody blogs, I came across the recipe for roasted blueberry cupcakes and thought it was perfect for what I wanted to do.

Mint Aero Chocolate Chip Cupcakes

So to kick off my blog in style, I decided to go for this recipe first due to buying this intriguing item ages ago – when I spotted it for a reduced price in Sainsbury’s (don’t worry, it’s still in date until July!)
