French Madeleines

I’m just in time for this month’s GBBO bake from my calendar as I showed you in my jammy dodgers post back in February. These were made for a training day at work and were a perfect excuse for playing with one of my new toys from Lakeland ­čÖé

Coffee and Walnut Cupcakes

I had a whole company attended course scheduled for work and it’s becoming the norm now for me to bring something baked with me. In fact, I’d feel strange if I didn’t bring something with me! I wanted to make something a bit more grown up and this little bottle of liqueur has been winking at me for a long time so I decided to make some coffee cupcakes and flavour the topping with the liqueur. Walnuts go lovely with coffee cake and I wanted some texture in the cakes so there you go, decision made!

Everyone prefers their coffee differently – black/white, sweet/no sugar, strong/weak etc. so I was a little nervous about making these and getting the coffee flavour right.

Yorkshire Parkin

This was a special request from a friend who randomly messaged me asking for cake. As that turned out to be such a spectacular fail, he came back to me and asked for this. I’d never heard of parkin before so I was keen to look it up and give it a go.

The spices are the star ingredients of parkin, as well as the porridge oats which gives it a great crumbly texture. Black treacle is key too, which I’ve never used before and was looking forward to trying.

Banana and Mixed Fruit Flapjacks

Another team meeting at work = another bake to bring along with me. I’ve got a reputation to uphold – the clinical manager is even thinking of making us have these meetings twice a month instead of once because he’s getting so fond of my treats! I have been baking up an absolute storm recently so I searched to try and find a healthy recipe for flapjacks.

I think I did a good job of keeping them healthy and delicious, just look at those ingredients up there, are you drooling already!?
