I made these as a special treat for Alex to take round to his friend’s place for his annual Super Bowl viewing party. This is a completely new one on me as it featured ingredients I’ve never used before (in a cake anyway) and because there were no eggs or butter/fat in it.

I bought this book from Amazon a little while ago and it absolutely had me desperate to bake with the delicious recipes in there. I’d never heard of Peggy Porschen before and boy, have I missed out! There are 25 recipes and I cannot wait to try out all of them. Sticky Toffee, Pecan Pie, Sugar Plum, Mulled Wine and Salted Caramel have all caught my eye.
I chose to make the ones titled Gianduja – partly because I thought the name was interesting and partly because I haven’t had Nutella in a long time and these cupcakes gave me a ready made excuse to buy some!

This is a bake of mine that I did about 6 weeks ago now, for a friend of mine I play netball with. She needed some cupcakes to take to a work party and said she knew exactly who to turn to. How flattering!
I spotted these carrot decorations in Sainsbury’s a few months ago on offer for a £1 so I picked them up, knowing I’d definitely use them at some point and here the opportunity came!

This is the first of quite a few posts that will be coming over the next 2 weeks as I will be doing more than my usual amount of baking. I’ve got a cake for a 70th birthday to make and one of my netball ladies has asked me to do a load of cupcakes for a work thing she has on so I’ll certainly be a busy bee! This recipe came from a need to bake something to take to a barbecue (as always!) and from a couple of challenges that some of the blogs I follow put up.
Star ingredient for this bake are the spices I used, particularly this beauty. It’s been sat in my cupboard for a while as I haven’t baked any gingerbread or ginger loaves in a while (I went through a phase of baking them every week whilst in my second year at uni, my housemates loved me!) I dug it out (luckily it was still in date!) and made spiced banana nut muffins. I say muffins but I actually didn’t have any muffin cases so they ended up being spiced banana nut fairy cakes but same difference 😛

This weekend I spent at home with my parents as it was my birthday on Thursday and Father’s Day on Sunday. I don’t get to spend much time with them as I’m working full time now, plus all of my sports and activities in the evenings and weekends so I really relished going home. Usually I make my Dad a Mary Berry cherry cake but he requested a blueberry cake next time I baked for him. Well I made blueberry cupcakes so sort of what he asked for!
I wanted to make blueberry flavoured cupcakes rather than vanilla ones with blueberries in them so in my various browsing of baking and foody blogs, I came across the recipe for roasted blueberry cupcakes and thought it was perfect for what I wanted to do.
