Coffee and Walnut Cupcakes

I had a whole company attended course scheduled for work and it’s becoming the norm now for me to bring something baked with me. In fact, I’d feel strange if I didn’t bring something with me! I wanted to make something a bit more grown up and this little bottle of liqueur has been winking at me for a long time so I decided to make some coffee cupcakes and flavour the topping with the liqueur. Walnuts go lovely with coffee cake and I wanted some texture in the cakes so there you go, decision made!

Everyone prefers their coffee differently – black/white, sweet/no sugar, strong/weak etc. so I was a little nervous about making these and getting the coffee flavour right.

Chocolate Salted Caramel Cupcakes

I bought these on a Lakeland splurge in January when I only needed another £1.50 to get my total up over £60 (I had gift vouchers, don’t worry!). I had to Google what “fleur de sel” actually was and when I found out, this little pot went straight into my basket.

I’ve been wanting to try making my own salted caramel cupcake recipe for a while, since I went to London with Alex and visited the Primrose Bakery in Covent Garden and picked one up there.

Red Wine Chocolate Cake

It’s my (almost!) mother-in-law’s birthday and she loves chocolate and red wine so what do I make for her? Red wine chocolate cake of course! I came across this recipe in the same way I seem to come across most of them these days – by browsing various baking blogs.

I was looking forward to making this very much as I don’t really bake with alcohol at all and I was curious to see whether or not the wine would bake out, as it does in stews etc… or whether it would keep that rich wine-y taste.

Peanut Butter Cookies

These were made in conjunction with the fudgy brownies for Alex to take with him to the Super Bowl viewing party. He wanted some American themed goodies and peanut butter was figuring highly so I made these.

I’ve never really had a taste for peanut butter but this stuff is honestly amazing! Incredibly sticky but the overwhelming taste of pure peanuts is just heavenly. I definitely couldn’t wait to cook these and see (taste!) the results.

Fudgy Brownies with Peanut Butter Frosting

I made these as a special treat for Alex to take round to his friend’s place for his annual Super Bowl viewing party. This is a completely new one on me as it featured ingredients I’ve never used before (in a cake anyway) and because there were no eggs or butter/fat in it.

Gluten Free Chocolate Brownies

I originally found this brownie recipe online after scouring the internet. I have a friend who is gluten intolerant and she always has to go without whenever I bake for friends so I specifically wanted a recipe for her. She also loves chocolate so a brownie seemed perfect. I’ve made these brownies a few times now, it’s become my go to recipe and I have literally never had a bad result with them.

As well as being gluten free, they are also dairy free so especially good for you! (well slightly anyway). This is a recipe I know and love and I want to share everything with you, that I think you will enjoy.

Raspberry and White Chocolate Muffins

So this is another old bake of mine, I did it about two months ago now. These are the raspberries I got when I went to a pick your own farm and I froze them because I didn’t know what to bake with them, although I had lots and lots of ideas. I eventually decided on this recipe, purely because I love white chocolate and raspberries as a flavour combination.
