Coffee and Walnut Cupcakes

I had a whole company attended course scheduled for work and it’s becoming the norm now for me to bring something baked with me. In fact, I’d feel strange if I didn’t bring something with me! I wanted to make something a bit more grown up and this little bottle of liqueur has been winking at me for a long time so I decided to make some coffee cupcakes and flavour the topping with the liqueur. Walnuts go lovely with coffee cake and I wanted some texture in the cakes so there you go, decision made!

Everyone prefers their coffee differently – black/white, sweet/no sugar, strong/weak etc. so I was a little nervous about making these and getting the coffee flavour right.

Chocolate Salted Caramel Cupcakes

I bought these on a Lakeland splurge in January when I only needed another £1.50 to get my total up over £60 (I had gift vouchers, don’t worry!). I had to Google what “fleur de sel” actually was and when I found out, this little pot went straight into my basket.

I’ve been wanting to try making my own salted caramel cupcake recipe for a while, since I went to London with Alex and visited the Primrose Bakery in Covent Garden and picked one up there.

Orange and Sultana Fairy Cakes

My Dad has really caught onto my fondness for baking to the point where every time I visit home now, I take my baking equipment and (some) ingredients and bake something for him. Sometimes he’ll specifically request something, other times he will let me choose. This little recipe is something he asked for me to make so here it is.

I didn’t make this recipe from any book that I have, so I was a little bit nervous that they wouldn’t rise properly or taste amazing but I didn’t have any complaints from Dad!

Gianduja Cupcakes

I bought this book from Amazon a little while ago and it absolutely had me desperate to bake with the delicious recipes in there. I’d never heard of Peggy Porschen before and boy, have I missed out! There are 25 recipes and I cannot wait to try out all of them. Sticky Toffee, Pecan Pie, Sugar Plum, Mulled Wine and Salted Caramel have all caught my eye.

I chose to make the ones titled Gianduja – partly because I thought the name was interesting and partly because I haven’t had Nutella in a long time and these cupcakes gave me a ready made excuse to buy some!

Carrot Cupcakes

This is a bake of mine that I did about 6 weeks ago now, for a friend of mine I play netball with. She needed some cupcakes to take to a work party and said she knew exactly who to turn to. How flattering!

I spotted these carrot decorations in Sainsbury’s a few months ago on offer for a £1 so I picked them up, knowing I’d definitely use them at some point and here the opportunity came!

Exciting News!

So remember back in July when I made my hamburger cupcakes? You might have missed the update to that post where I entered them into a competition run by National Cupcake Week (which starts today, 16th-22nd September!) You can see the original post HERE.

I absolutely did not expect to hear anything from them at all and then I start my working day this morning and an email pops itself into my inbox. I have been shortlisted as a finalist!!! I have to go to the Birmingham NEC Arena on 9th November to present my cupcakes and none other than my baking hero, the great Mary Berry will be there to taste and judge the cakes!! I feel like I need to write this whole post in capitals with an endless amount of exclamation points just to convey my excitement at this news.

Of course I will keep you updated with progress and yes my friends and family can all look forward to eating lots of these as I try to get them perfect for Mary!

Hamburger Cupcakes

Yep you read the title right, this weekend I made cupcakes that look like hamburgers! It was one of my netball friends birthdays a few weeks ago and as yesterday was absolutely gorgeous barbecue weather, that’s exactly what we did!

When I first decided to start this blog, I did a lot of research and browsing through the more established blogs to get ideas for bakes or even to just copy a bake I really liked. This recipe most definitely caught my eye and I am absolutely delighted that I’ve finally had an opportunity to actually bake/make it! You can find the pictures that inspired me at Bakerella’s blog which I think you will agree are pretty awesome. I didn’t have time to make the cookie fries but I definitely think I’ll give them a go in the future.

These beauties went down very well (at least I think they did!) and it was really exciting for me to actually create something. The assembly of all the different parts of these cupcakes was actually more rewarding than the bake of them which is unusual for me.
