This is the first of quite a few posts that will be coming over the next 2 weeks as I will be doing more than my usual amount of baking. I’ve got a cake for a 70th birthday to make and one of my netball ladies has asked me to do a load of cupcakes for a work thing she has on so I’ll certainly be a busy bee! This recipe came from a need to bake something to take to a barbecue (as always!) and from a couple of challenges that some of the blogs I follow put up.
Star ingredient for this bake are the spices I used, particularly this beauty. It’s been sat in my cupboard for a while as I haven’t baked any gingerbread or ginger loaves in a while (I went through a phase of baking them every week whilst in my second year at uni, my housemates loved me!) I dug it out (luckily it was still in date!) and made spiced banana nut muffins. I say muffins but I actually didn’t have any muffin cases so they ended up being spiced banana nut fairy cakes but same difference 😛
