Another team meeting at work = another bake to bring along with me. I’ve got a reputation to uphold – the clinical manager is even thinking of making us have these meetings twice a month instead of once because he’s getting so fond of my treats! I have been baking up an absolute storm recently so I searched to try and find a healthy recipe for flapjacks.
I think I did a good job of keeping them healthy and delicious, just look at those ingredients up there, are you drooling already!?

I love blueberries. A beautifully coloured fruit and such a lovely flavour too, it’s a double threat! I also adore lemons and more specifically, lemon zest. The most gorgeous smell fills my kitchen whenever I bake with lemons and it’s an incredibly comforting and welcoming scent.
So what do I do when it’s my Dad and Nan’s birthday? Well make a lemon and blueberry cake of course!

I made these as a special treat for Alex to take round to his friend’s place for his annual Super Bowl viewing party. This is a completely new one on me as it featured ingredients I’ve never used before (in a cake anyway) and because there were no eggs or butter/fat in it.
